Sorry we're late this year editing the seasonal green tea - sencha - page, but so have the teas from northern areas of Kyushu in 2006. Alternate, warm then cold periods throughout February and March left us slightly confused with manufacturing and release dates of the early sencha uncertain and not forthcoming. Anyhow, after the threat of late frosts past, spring arrived by late March and the sencha leaf-buds blossomed. As of April 25, with many of the earliest shin-cha green teas now made, the 2006 sencha promise to be a delicious offering. Bright and fragrant teas, on a par with last year's 'super' shin-cha. In 2006 Gray & Seddon is again extending its premium sencha - green tea - listings with new additions originating from gardens all over Kyushu Island and parts of Honshu as well. G&S is now promoting selected teas from southern Kyushu such as Kagoshima, the Honshu giant Shizuoka and the connoisseur's favourite, Niigata. Please look out for those, or e-mail G&S for details. Buying sencha - premium green tea

Most people who love fine sencha green tea will have only tasted teas originating from Shizuoka, the largest and most commercial tea-producing region in Japan. Importers in the USA & Europe routinely source their teas from this region. However, there are many other sencha-producing areas in Japan where the dedicated sencha drinker can find regional styles of this uniquely Japanese green tea. Among the Sencha, and wider Japanese listings, we G&S now included a new selection of the best Ureshino Shin-cha (early harvest tea), a bigger range of deep-steamed Fukamushi teas and added perhaps the most comprehensive listing of late-season sencha and bancha available anywhere on-line. SENCHA: The Basics
Sencha literally means roasted tea. An old name pertaining to the main processing stage once dominant in the making of this most popular of all Japanese green tea. In the modern sencha-making process, the leaf is initially steam treated to a precursor tea called ara-cha, before further processing by hot-air drying, rolling and finally light roasting. The leaf of the best sencha has a high degree of size uniformity and possesses an aromatic & polished emerald colour. Tamaryoku-cha is frequently used as an all-embracing term for fine sencha. Indeed, some western tea traders prefer to use this name as a label. The early season sencha is most often named, shin-cha. But in Japan this term is only applied in the first weeks of marketing new tea, and is normally dropped as June approaches. Sencha is certainly shin-cha before the end of May. After that date regional names take precedence. Sencha may also be of a type called kabuse-cha if cultivated under shade. This sencha is very often the highest quality. Sencha may also be (fu-)hukamushi-cha if the processing has involved a heavier steaming cycle. Fukamushi-cha is fragrant and heavily flavoured sencha. Tea harvested towards the end of spring and into the summer months are usually called bancha. Then there's the use of fine sencha for kona-cha making if the leaf is finely chopped or kukicha if the tea includes soft stems. However, in terms of leaf form, two basic kinds of sencha leaf are processed; the needle leaf and the twisted knot or 'comma' leaf. The needle leaf is, as its name suggests, long/short and thin, (round or flat) & often highly glossy. Needle leaf sencha is favoured in Shizuoka and in the Yame region of Fukuoka. While in other areas, including most of Kyushu, the comma-shaped leaf form is much favoured.

EMERALD SENCHA 'SECHIBARU' This popular shin-cha is one of the earliest seasonal green teas from the hillside gardens at Sechibaru, northern Kyushu, being harvested towards the end of April each year. Emerald is made from a high quality leaf grade possessing fine tamaryoku-cha characteristics; deep, polished green appearance and intense 'shin-cha' aroma. EMERALD NEEDLE SENCHA is a delightful ichi-ban spring green tea with a richly flavoured 'buttery' palate. YAME TEN YOU SENCHA is a distinctive ichi-ban sencha. The earliest tea and finest grade harvested and processed in late April 2006. The leaf is characteristically sweet, deep green with a tightly rolled needle form. WHAT IS SHIN-CHA?
The first tea harvest of each spring is termed "ichi-ban cha" or shin-cha, 'new tea'. Shin-cha is a label applied to sencha at the tea-shop and should strictly be used for sencha on sale until about the end of June. After which the term ceases to be employed in sencha marketing. Shin-cha is regarded as the highest quality sencha of each year. They are grades of sencha that are more aromatic, delicate on the palate and brightly coloured than later teas. They also represent some of the most expensive sencha of any given year. Most sencha is cultivated in unshaded gardens where the leaf is exposed to direct sunlight. Some specialist sencha growers use the kabuse-cha method of shading tea prior to harvest. This technique imparts mellower flavours & subtler colours to the beverage than observed with teas grown in direct sunlight. The kabuse styles of sencha are produced in very limited amounts. They may be hand harvested and the best of them cost a fortune.

URESHINO SHIN-CHA 2006
URESHINO SHIN-CHA is a distinctive ichi-ban style sencha. The earliest tea and finest grade harvested and processed late April in 2006. This sparkling Ureshino shin-cha is again a generous offering for fine sencha drinkers. Made from the first leaf-bud shoots, the tea is processed to the familiar knot or 'comma' shaped leaf which holds a characteristically flowery shin-cha green fragrance. APRIL SENCHA
APRIL SENCHA is one of a collection of light and invigorating - heavier steamed - green teas being made at the seaside gardens at Sonogi village. 'April' Sencha has become a G&S favourite over recent years, been carefully selected from the earliest Sonogi harvests. The 2006 tea is a small, open, twisted emerald leaf, with a delightfully fresh green-sencha fragrance. Infusions of this 'April' are bright and brisk-green with a long & satisfying finish. TOKUJO SENCHA
A very refreshing sencha made in the Yame needle-leaf style. The leaf character of Tokujo is small, polished needle-shaped and although from a later spring harvest, retains an intense fragrance. JADE TREASURE
JADE TREASURE is Gray & Seddon's top Sechibaru sencha selection. Made from a soft and nutrient rich ichi-ban leaf. YABUKITA: SEA BREEZE
YABUKITA SEA BREEZE is an April-harvested sencha of great strength, clear colour and lively-astringent palate. Sea Breeze 2006 tea is a lightly aromatic loosely rolled leaf. FUKAMUSHI SPRING
FUKAMUSHI SPRING is one of Sonogi's more heavily steamed ichi-ban teas. Character: the new tea is again made of a fragrant ichi-ban leaf. Infusions are very bright, lime greens with a balanced sharpness. Fukamushi Spring 2006 carries that distinctive Sonogi deep-green sencha flavour. An excellent choice for the fine sencha drinker. ICHI-BAN SENCHA
ICHI-BAN SENCHA is Sonogi's premier sencha. A first-harvest grade ichi-ban sencha, made only from the first spring shoots of the new season. The new tea is also a superb sencha with bright colour and bold aroma. Character: small, twisted open-leaf (slightly wiry) ichi-ban leaf and with high 'shin-cha' fragrance and glowing infusions. EMERALD SENCHA 'URESHINO' is our standard Ureshino-cha. Harvested and processed at Ureshino village on the end of April 2006, this shin-cha is among the earliest and best seasonal green teas around.
