ELDER FLOWER TEA
Organic Elder Flower of Sambucus nigra has masses of small fluffy creamy white to golden flower heads, which produce a wonderful malted honey aroma. The beverage is a brilliant medium golden colour which carries the same aroma as the flowers. On the palate this herbal tea reflects the fragrance, without finishing sweet. YARROW: KNIGHT'S MILFOIL
Yarrow Achillea millefolium is an aromatic wild flower which has long been used in the kitchen and for herbal cold remedies. The plant is characterized by its multitude of brilliantly white flower heads and very fine fern-like leaves, commonly found on heaths and meadows across Europe, America and Austalasia. It is said that Achilles used this plant to staunch the bleeding wounds of his troops in battle: this may account for one of its many common names; viz Solder's Woundwort. Today light warm infusions of this most aromatic of wild plants are still used as tonics for colds and flus. MARSHMALLOW LEAF
Marshmallow, Althaea officinalis. An infusion of marshmallow leaf is drunk more commonly as an aid to digestion or to relieve coughs and bronchitis, rather than for any intrinsic flavour, it makes an interesting counterfoil to other infusions offered here! MARSHMALLOW LEAF 40g 1.4oz $5.50.

ORGANIC SPEARMINT
Our Organic Spearmint, Mentha spicata, is processed to form a closely chopped lime-green leaf giving the appearance of an opened-leaf green tea. The fragrance however is unmistakably one of a superior quality spearmint. Infusions of this leaf are a bright yellow and aromatic. Flavours are a complexity of mints, sparkling with every mouthful. TASMANIAN PEPPERMINT
A pervading essence of fine peppermint, Mentha piperita, is the hallmark of this quality purple and emerald leaf herbal. Infusions of our Peppermint have great depth of colour and flavour; bright amber with a pleasantly moderate sweet mint aroma. HYSSOP
Hyssop Hyssopus officinalis. A much used tea herbal still prescribed as a carminative and for relieving the aches and pains in rheumatism. The aromatic oils extracted from this plant are perhaps more familiar as ingredients in many famous liqueurs and perfumes such as Eau de Cologne. Our Hyssop is an attractive combination of grey-green leaf and purple blossoms, Hyssop has a slightly menthol aroma and flavour and a dry finish on the palate. Would make an excellent aperitif. Dandelion Leaf Taraxacum officinale. As a kitchen herb and tea, Dandelion has been much neglected over the last century. It may come as a surprise to many, but the the saw toothed leaves of the common dent de lion make flavoursome infusions and tisanes.
